Charlie’s birthday breakfast party favorite!
Need a recipe to make ahead of time for New Year’s Day breakfast? Here you go! 2 cups broccoli florets 10 green onions, chopped ½ pound sliced smoked salmon, cut into 1-inch pieces 2 c. Monterey jack cheese, shredded (about 8 oz) 8 ounces cream cheese, chilled, cut into ½ inch pieces 8 large eggs 2 c. milk 1 c. buttermilk baking mix ¼ t. salt; ¼ t. black pepper Butter a 13x9-inch dish. Arrange broccoli & half of green onions evenly over the bottom of the dish. Sprinkle with smoked salmon, Monterey jack cheese, cream cheese pieces & remaining onions. *Can be prepared a day ahead. Cover and refrigerate. Next day: Preheat oven to 375 degrees. Mix eggs, milk, baking mix, salt & pepper until smooth. Pour batter over salmon mixture. Bake casserole until just set in center- about 30 min. Let cool 10 minutes before serving.

RECIPE OF THE MONTH: Corn Pudding Here’s another favorite for the Kingvale Cook Book. From Kay Philips 2 cans niblet corn 3 T butter 3 T flour 2 cups milk 1 cup grated cheese 2 eggs 1 onion chopped Salt, pepper, thyme, oregano Beat the eggs slightly. Saute the onion in butter, blend flour, add milk and cheese slowly. Add seasonings. Stir in the corn and eggs. Put in low buttered casserole (sprinkle top with breadcrumbs, if you like), and dot with butter. Bake in medium oven (350) for 35 minutes. Serves 4. |
