Smoked Salmon Breakfast Casserole

​Charlie’s birthday breakfast party favorite!

Need a recipe to make ahead of time for New Year’s Day breakfast?  Here you go!
   2 cups broccoli florets
   10 green onions, chopped
   ½ pound sliced smoked salmon, cut into 1-inch pieces
   2 c. Monterey jack cheese, shredded (about 8 oz)
   8 ounces cream cheese, chilled, cut into ½ inch pieces
   8 large eggs
   2 c. milk
   1 c. buttermilk baking mix
   ¼ t. salt; ¼ t. black pepper
Butter a 13x9-inch dish.  Arrange broccoli & half of green onions evenly over the bottom of the dish.  Sprinkle with smoked salmon, Monterey jack cheese, cream cheese pieces & remaining onions.  *Can be prepared a day ahead.  Cover and refrigerate.
Next day:  Preheat oven to 375 degrees.  Mix eggs, milk, baking mix, salt & pepper until smooth.  Pour batter over salmon mixture.  Bake casserole until just set in center- about 30 min.  Let cool 10 minutes before serving.
